Strawberry 200gSugar 100gWater 40gLemon juice 15gAlcohol 20g
Puree fruit..warm puree in saucepanMake a syrup and boil to 220. Mix into fruitreturn to a boil and add lemon juice and alcohol
Banana Mousse
Gelatin 8gbanana pulp 310glemon juice 25gsugar 35galcohol 25gcream 420g
total: 823g
soften gelatinHeat 1/3 of banana pulp to 60C and add gelatin, stir till dissolved. Mix in lemon juice and sugar. Dissolve sugar. Add mix to remaining bananas and add alcohol. Cool to 25C fold in whipped cream.
